Starting in 2004, I lived in the Central American country of Nicaragua for three years.  What originally was supposed to be a trip to complete a single landscape project for a new hospital, turned into project after project as the demand for a landscape designer was high.  While visiting a local volcanic lake resort, I came across a drink called “Te de Jamaica” or Jamaican Tea.  I later learned the drink was made from hibiscus flowers and I have to say it didn’t have a bad taste at all (I should point out I am not a tea drinker).

While browsing the web I came across Fourth Sense Cooking, a blog with a lot of interesting recipes.  Among these was a recipe for a Hibiscus squash, which reminded me a lot of those days back in Nicaragua.

I thought I would include the link here for those of you who may be interested in trying the recipe (Quick note: make sure the hibiscus you are using has not been sprayed with hazardous pesticides as that may make the drink dangerous.):
